• Linguine pasta: 120g

• Minced garlic: 10g

• Chili oil: to taste

• White wine: 10ml

Lobster Bisque Sauce:

• Lobster heads and shells: 500g

• Onion: 100g

• Leeks: 100g

• Carrots: 100g

• Celery: 100g

• Minced garlic: 20g

• Tomato paste: 20g

• White wine: 100ml

• Chicken stock: 2 liters

Thyme: 1-2 sprigs

• Bay leaf: 1-2 leaves

Preparation

• Sea Shrimp: Peel, clean the black vein, and slit the back to create an attractive presentation.

• Green Mussels: Clean thoroughly, leaving no sand or impurities.

• Prepare the Vegetables: Dice the onion, leeks, carrots, and celery into small cubes.

• Sauté the Vegetables: Heat a little oil in a pot, add the diced vegetables, and sauté until softened and fragrant.

• Add Lobster Shells: Add the lobster heads and shells to the pot, and sauté with the tomato paste until the mixture turns red.

• Deglaze with Wine: Pour white wine into the pot, bring to a boil to deglaze, and enhance the flavors.
Cook the Sauce:

• Add chicken stock and herbs (thyme and bay leaves) to the pot. Simmer for about 40 minutes to blend the flavors and thicken the sauce.

• Strain the Sauce: Strain the mixture through a sieve or fine cloth to remove any coarse particles, resulting in a smooth and delicious Lobster Bisque sauce.
